Lean, Green Smoothie!
Greetings! Today, I want to share my current go-to breakfast: my own version of the green smoothie. Lately, I seem to be one of those people who tends to forget breakfast. Consequently, I'm usually rushing in the morning to whip something together and came up with this smoothie sort of by accident....this is what I happened to already have in my kitchen, and it worked, so I keep making it. If it ain't broke, right?
The result is a yummy, satisfying, and healthful smoothie, packed with antioxidants, vitamin green, and protein! (sorry, I'm not the most scientific)
And, yep...that's a lot of potatoes...

Ingredients:
- 2 big hand-fulls of raw spinach, rinsed
- 1/2 to 1 cup apple juice or apple cider
- 1 cup Fage Greek Yogurt 0%
- 1 1/2 cups frozen fruit
Toss all ingredients in the pool, and blend until smooth.
If you have not tried Fage (pronounced "fa-yeh") you simply MUST. Most fat-free greek yogurts taste awful, but Fage is fat-free and fantastic! It also packs 23 grams of protein per cup, which is outstanding. Aaaaannnnnd.....Costco carries Fage, so that makes it doubly delightful.
I use about a cup of frozen fruit, but if you want a sweeter smoothie, you could certainly add more fruit or more juice.

My sister-in-law got me hooked on Greek yogurt - loving it! Going to try this recipe. My son tried the veggie shake they made at Costco (sample day is the only time he wants to come with me to food shop - lol) and loved it, so this might be even better.
