Easy Dinner - Slow Cooker Pineapple Teriyaki Chicken

I just love easy recipes. Don't get me wrong. I also love complex creations that require hours of undivided attention. But, as a workin' gal, some days I just want a delicious dinner with minimal effort. 

I was perusing Pinterest a few weeks ago, and noticed a friend of mine had pinned a crock pot recipe involving chicken, pineapple, soy sauce and brown sugar. I should have repinned it. I meant to repin it. But I didn't. And when I went back to look for it, I couldn't find it. 

So, dag nabbit, I took a walk on the wild side, and invented my own.






And when I say this is simple, I mean, this is SIMPLE.

Ingredients:

  • Skinless chicken pieces (I used about 5-6 chicken thighs)
  • 1 1/2 cups frozen pineapple (or fresh....whatever you got)
  • 1/2 cup low sodium soy sauce
  • 1 cup chicken stock
  • 1/2 cup brown sugar
Put all ingredients in your slow cooker, and cook on low for 7-8 hours. When you chicken is near the 7-8 hour mark, transfer most of the liquid to a sauce pot and heat through until reduced by about half. Return liquid to your crock pot.  



Now, I feel it necessary to do a quick public service announcement. I always wondered if "pregnancy brain" was a real thing. Um, yes, yes it is. Ladies and gents, I, Alison, set my slow cooker to low, and didn't even realize I never plugged it in. Oopsie! So, you can imagine my surprise when 2 hours later, not a whole lot was goin' down in my crock pot. But, alas, this recipe still prevailed, and got two enthusiastic thumbs up from the hubs.


We served it over egg noodles, and topped it with cashews for no other reason than my husband likes to top anything remotely Indian- or Asian-flavored with cashews. Go figure. But it was delicious nonetheless.
