Veggies at all Costs

Many of you know I'm a fan of green smoothies. I've always been more a fruit-person as opposed to a veggie-person, so green smoothies are a great way to get veggies in this girl.

I've found, though, that I need to drink massive amounts of green smoothies in order to use up my Costco-size bag of spinach before it goes bad. And then I had that glorious "Duh" moment. 



I stuffed about half of the bag of spinach into the blender (I had to do this in batches), added a touch of water, and blended away!


I poured the blended spinach into ice cube trays, and popped them in the freezer.  I know, I know...this picture is so un-appetizing.


 Once frozen, I transfered the spinach cube to a ziplock bag and back to the freezer it went!


Now I have a manageable amount of fresh spinach, and plenty of frozen spinach for green smoothies of the future!

I do this with any veggies that I have a hard time using up before they start going to mush (I always come home with have a shopping cart full of produce, but my good intentions aren't always fulfilled). I mostly use them for baby food, but I make a spinach/carrot/whatever veggies are in the fridge puree that I sneak into spaghetti sauces, and i ALWAYS make too much- so I freeze it and have easy drop in cubes for next time. :) - SarahJayne

  4. You can also freeze the spinach before pureeing it. We just put spinach into small ziploc bags and toss it in the freezer. The leaves freeze flat and are easy to stuff in the blender for green smoothies. Same basic idea, but less work. ;-)

I realize I didn't explain this well, though not that it really matters at this point. ;-) We freeze the spinach, without prepping it at all and then when we're ready to make a green smoothie we just toss the frozen spinach in. It doesn't get pureed twice, zero prep work needs to be done. You can put an entire bag of spinach, as is from the store, straight into the freezer and the spinach leaves will still freeze individually. So basically it's the same as if you put the spinach into the fridge, but it lasts way longer. We individually bag our fruit and spinach so in the morning James can grab a bag of spinach, a bag a fruit - toss it in the blender with liquids and he's got a smoothie. :-)
